HOT POT
Kyushu hot pots at the heart of the table
Plump beef offal simmered in a garlic-infused soy broth (Hakata motsunabe), and tender jidori chicken in rich, house-made white broth (mizutaki). Finish with rice porridge or ramen cooked in the remaining broth.

FRESH FISH
Fresh fish from Hiramatsu fishing port
Seafood landed at Hiramatsu port in Kitakyushu, served as sashimi at its best. Try goma kanpachi, amberjack dressed in a fragrant sesame sauce – a Kitakyushu local favorite.
03

Kumamoto horse meat yukke, Miyazaki chicken nanban, Hakata crispy chicken-skin gyoza and mentaiko rolled omelet – a little taste of every prefecture in Kyushu.
